Originally established to provide intensive seafood training for chefs at The Seafood Restaurant, the school quickly expanded its offering after the launch of its first leisure courses proved an instant success.
Over the past 26 years, the school has evolved with each cookery book Rick Stein released. Today, it offers a diverse range of leisure courses, including evening one-dish workshops, half-day, one-day, two-day and four-day cookery experiences.

Five-Day CTH Level 2 Award in Fish & Shellfish Cookery
Join Head Chef Nick Evans and his team to learn how to prepare and cook fish and shellfish to a professional standard. Available at both Beginner and Intermediate levels, this five-day accredited programme provides practical, hands-on training in a professional kitchen environment.
Beginner Course
The Beginners course starts with Kitchen Hygiene & Food Safety and then guides you through the fundamental skills of food preparation, essential cooking techniques and the delivery of high-quality fish and shellfish dishes. Ideal for those looking to gain confidence and build a strong culinary foundation in seafood.
Intermediate Course
Designed for cooks with existing experience, the Intermediate course builds on these foundations, developing your culinary techniques, ingredient knowledge and presentation skills. The course covers more advanced preparation methods and helps you develop the confidence to produce consistently high-quality fish and shellfish dishes in a professional kitchen setting.
